Passion fruit

Passion fruit (Passiflora edulis) is instantly recognisable for its sharp tropical aroma and bright acidity, but it is more than a flavour ingredient. Research into the fruit and its different plant parts has identified a broad range of phytochemicals, including flavonoids and other polyphenolic compounds, while the edible fruit also contributes vitamin C and other nutrients. For functional beverage development, passion fruit is especially useful because a relatively small amount can give a formula freshness, aroma and complexity — helping balance botanicals or stronger ingredients without turning the product into a conventional sweet juice.
